Inspired by Jamie Oliver – Mackerel and Quinoa Salad

Im a big fan of Jamie Oliver and the work he does to promote wellbeing through real food and cooking.

Broad bean and feta burgers

300g of fresh, (defrosted) frozen or canned organic broad beans
75g organic feta cheese
3-4 chopped spring onions
half a clove of garlic or to taste
1 tablespoon olive oil
ground black pepper
pinch of sea or himalyan salt

If you are using fresh broad beans, shell and then boil for 5 mins.

Joanna’s Favourite Green Smoothie

Filtered water
Fresh pineapple – skin removed
Fresh washed spinach or kale leaves
1/4-1/2 avocado
Splash of Coconut milk/water
Fresh piece of peeled root Ginger – thumb size or to taste
Squeeze of lemon or lime juice
Optional extra – 1/4-1/2 tsp organic Barley Grass

Festive Warm Mulled Apple Juice

1 litre bottle of cloudy apple juice, or juice your own apples in your juicer.

2-3 tablespoons of Mulling Spices – these can be bought ready mixed or blend your own warming favourites. (Cinnamon sticks, ginger, cardamon pods, star anise, red peppercorns, nutmeg, cloves, mace…)

Walnut Pate – Raw

Pre-soak 1 cup of walnuts for 4-6 hours – drain & rinse
1 tablespoon lemon juice
1 teaspoon olive or flax oil
1 teaspoon tamari
1/4 teaspoon garlic powder or finely chopped fresh garlic
Dash salt – Himalayan or sea salt
1-2 finely chopped spring onions

Chia Pudding with Goji Berries

half a cup of chia seeds
3 cups of almond or hazlenut milk -
half a cup of goji berries
1/8-1/4 cup of agave or maple syrup to taste

Mix well to break up the chia seeds and prevent a lumpy pudding

Delicious oat, pecan, cranberry & goji berry cookies with tangerine zest.

2 cups of raw oat groats (or rolled if not fully raw)

1 cup of roughly chopped raw pecans

1 cup dried cranberries

1/2 cup goji berries

1 medium apple freshly grated

ROSEHIP SYRUP

250g Rosehips
5 cloves (optional)
1 cinnamon stick (optional)
500ml water
125g caster sugar

Crush the rosehips slightly, and put in a pan with water adding cloves and cinnamon if you want to. Simmer for 20 mins.

Strain then add the sugar, stiring until dissolved. Bring to the boil and then simmer for a further 10 mins.

MARCH – Buckwheat Pancakes

Makes 8 gluten free pancakes

3 tablespoons of butter
225ml milk (organic or soya)
pinch of salt
60g rice flour
2 1/2 tablespoons buckwheat flour
2 small free range or organic eggs
40ml sparkling mineral water

FEBRUARY – Sweet potato falafel

2 medium sweet potatoes (700g)
1 1/2 tsp ground cumin
2 small cloves chopped garlic
1 1/2 tsp ground coriander
juice of half a lemon
120g gram flour
splash of olive oil
handful of sesame seeds
salt & black pepper
2 handfuls of fresh coriander
