- 300g of fresh, (defrosted) frozen or canned organic broad beans
- 75g organic feta cheese
- 3-4 chopped spring onions
- half a clove of garlic or to taste
- 1 tablespoon olive oil
- ground black pepper
- pinch of sea or himalyan salt
If you are using fresh broad beans, shell and then boil for 5 mins.
Blend all the ingredients together, except half the chopped spring onions. Add the reserved spring onions to the blended mixture and form balls.
Heat a griddle pan and press each ball lightly to form a small burger. Cook until the feta melts and each side is lightly browned.
Delicious served with a fresh green salad, olives and griddled cherry tomatoes on the vine.
