APRIL RECIPE – CHICKPEA & BEAN BURGERS

  • 410g can organic chickpeas rinsed & drained
  • 410g can organic kidney beans rinsed & drained
  • 1 grated carrot
  • 1 small grated onion
  • 1 chopped garlic clove
  • 50g sunflower seeds
  • 2tbs tahini – drain off excess oil
  • 1 handful chopped coriander
  • 1tbsp low salt bouillon powder

Pre-heat oven to 220C/gas mark 7

Line baking tray with greaseproof paper

Whizz together for 10 secs all ingredients in food processor, or with hand held blender

Shape coarse mixture into approx 20 balls – flatten on baking tray

Bake for 15 mins. until lightly browned

Serve with fresh salad or lightly steamed vegetables.

These burgers are great cold in a lunch box or picnic

I took them with a food flask of nutritious soup on a winter picnic after a long dog walk at Butts Brow, near my clinic in Hailsham, looking out across Willingdon and Eastbourne, East Sussex on a fine winters day.
