2 cups of raw oat groats (or rolled if not fully raw)
1 cup of roughly chopped raw pecans
1 cup dried cranberries
1/2 cup goji berries
1/2 cup of roughly chopped dates
1 medium apple freshly grated
4 tbsp organic unrefined coconut oil
3 tbsp agave nectar
1-2 tsp ground cinnamon
1/2- 1 tsp ground ginger
1 tsp vanilla powder or paste
zest of tangerine
pinch of sea or himalayan salt
Put the oats in your food mixer with the cinnamon, ginger, salt and vanilla – pulse a few times.
Add the chopped dates, grated apple, tangerine zest, coconut oil and agave then mix until a dough texture.
Put mixture into a large bowl, stir in pecans, gojis and cranberries.
Shape dough into 12 medium sized cookies or 24 small cookies.
Place on mesh dehydrator tray and dehydrate at 100 degrees for 12-15 hours.
Don’t have a dehydrator? Preheat your oven to 300 F, close oven door with cookies on a baking tray – allow oven to cool with cookies inside. They have a lovely chewy texture.
