Im a big fan of Jamie Oliver and the work he does to promote wellbeing through real food and cooking.

This recipe is inspired by Jamie Oliver, and based on his 15 minute meals ideas, for delicious, nutritious, super-fast food.

Quinoa:

  • 1 mug of quinoa
  • 1/2 a fresh lemon
  • 2 mugs boiling water

Boil quinoa for 10-12 mins, in a medium saucepan with pinch of pink himalayan salt and 1/2 a lemon, stirring from time to time.

Drain when cooked, and squeeze lemon over the quinoa with tongs or between two forks

Fresh Mackerel or Sardines:

2-3 small mackerel/sardines per person or one larger mackerel, your fish monger will scale, remove guts and heads too if you ask.

  • wash the makerel and score the outer skin several times along each fish, both sides
  • rub skin with garlic and sprinkle with paprika or ground coriander
  • if you like a lot of garlic, place garlic slithers or crushed garlic and half a slice of lemon inside each fish to taste
  • grind of black pepper over each fish
  • grill or griddle the fish about 4-5 mins each side depending on size – the flesh should flake easily when cooked

Serve with slices of fresh tomatoes, cucumber and chopped spring onions, drizzled with olive oil and apple cider vinegar add some fresh green leaves to garnish!
